
Quick Lightly Salted Cucumbers in a Pot

Perfect for winter stocking. Making lightly salted cucumbers takes only a few hours and minimal effort. Cucumbers made with this recipe turn out pleasantly crisp, juicy, and aromatic—delicious! For preparation, choose small cucumbers, preferably young ones with bumpy skin, as they will crunch better. Be sure to taste them so the cucumbers are not bitter and the appetizer will delight you with its piquancy and distinctive flavor.

Prepare all ingredients according to the list. If your cucumbers are wilted, soak them in cold water for a couple of hours. For those who like it spicier, I recommend adding 1/2 a chili pepper pod.

Trim the cucumbers on both ends, rinse thoroughly, and transfer to a pot.

Garlic is best chopped coarsely so it comes through more clearly in the finished dish. Also remember to add peppercorns. If you are adding chili pepper, slice it and remove the seeds.

In a liter of hot water (not boiling), dissolve the salt and sugar. Pour over the cucumbers.

Cover the cucumbers with a plate and place a weight on top (for example, a jar of preserves). This way the cucumbers and herbs will be fully submerged in the brine. Let the cucumbers and brine cool to room temperature, then put the pot in the refrigerator for another 10–12 hours before serving the appetizer.
