Description

1. Pre-freeze the raspberries in the freezer. You can do this, for example, the night before, if using fresh berries.

2. Place the raspberries, honey, and cream into a blender. Process until you achieve a frozen purée consistency.

3. Now there are two options: either serve immediately, or freeze again to make the sherbet denser in consistency, so that ice crystals can be felt.
