Raspberry curd

Description

The recipe won't take much time. Delicate-tasting raspberry curd is perfect for serving at tea or coffee time. It's so delicious that you won't be able to stop eating it until the bowl is completely empty. The best pair for this cream are toasted bread for breakfast or fresh pastries for afternoon tea. Serve chilled.

    Pour the raspberries into a bowl and cover with water, then rinse thoroughly.

    Place the raspberries in a cauldron or a non-stick saucepan, add granulated sugar and lemon juice. Put the container on the stove.

    Bring to a boil, reduce heat, and simmer for about 10–12 minutes, until the raspberries become soft.

    Turn off the heat, let it cool slightly, and strain the raspberry mixture through a sieve into a bowl or salad bowl. Discard the pulp—it is no longer needed. You can use it to make tea or fruit drink.

    Beat the chicken eggs into a bowl, whisk, and pour the mixture into a cauldron. Add the strained raspberry purée and gently mix everything. Place the cauldron on the stove and turn on the lowest heat.

    Whisking constantly, cook the cream until it thickens, about 5–7 minutes. Do not stop stirring, otherwise the eggs will curdle and you'll end up with raspberry scrambled eggs instead of cream! As soon as the cream thickens slightly, turn off the heat.

    Be sure to strain it through a sieve to remove the clumps of coagulated proteins.

    Let it cool slightly, then incorporate high-quality butter into the cream. This step is where most mistakes occur due to low-quality butter, which tends to curdle and form cottage cheese-like lumps when mixed with the cream. Therefore, do not add the butter while heating the cream—only afterwards!

    Then cover the cream with plastic wrap, pressing it directly onto the surface to prevent a skin from forming, and refrigerate.
