
Raspberry fool
Description
The recipe won't take much time. This dessert is a perfect addition to any brunch or afternoon tea, especially since it's prepared in just a few minutes. Fruit fool is a delicate and very light spring-summer dessert that is more than just fruit with sugar-sweetened whipped cream. Fool can be made with almost any kind of fruit, including stone fruits such as mango or peaches. However, it turns out best with berries, especially strawberries or raspberries. Serve chilled.

1. In a container, mix raspberries, sugar, and liqueur (or water, if preparing for children) and let the raspberries sit for 10–15 minutes to release their juice.

2. When the raspberries become softer, mash them with a fork until they reach a puree-like consistency.

3. Whip the cream with powdered sugar until soft peaks form.

4. Using a rubber spatula, gently fold the raspberry purée into the cream in several motions to create a marbled texture.

5. Place the dessert into a parfait glass, sprinkling crushed shortbread cookies on top. Garnish with mint leaves and serve.
