Description
Homemade baked treats for tea. This raspberry cookie recipe works not only with jam—you can also use fresh berries, mashed with a fork, for example. You can add raspberries directly into the dough, but in that case, the cookies will turn out darker in color. Serve warm or chilled. Perfect with tea.

1. First, sift the flour and baking powder into a small bowl. Mix well with a whisk and set aside. Combine softened butter with sugar and begin beating. Add the egg and vanilla extract (almond extract also works perfectly in this raspberry cookie recipe) and beat until smooth.

2. Then gradually add the flour mixture, kneading until you get a smooth, lump-free dough. This may take some time, but the dough should be soft and airy.

3. Jam is quite straightforward, but fresh berries are best combined with sugar and strained through a sieve. You can also add some whole berries if desired. This simple raspberry cookie recipe can also use frozen berries, simmered gently with sugar for a short time.

4. Line a baking sheet with parchment paper. Divide the dough into small balls, making indentations in the center of each. Carefully place raspberries into the indentations, ensuring they don't leak out.
