
Raspberry fig
Description
For those who are completely unfamiliar: "smokva" is a fruit or berry purée that has been heavily reduced with sugar and then air-dried or dried in a warm oven (40–50 degrees). Essentially, it is the same as fruit leather, except you can make it from almost any fruit or berries without adding egg whites.

1. Sort the berries, removing small debris.

2. Place raspberries in a saucepan with a thick bottom, sprinkle with sugar. Let stand until the berries release their juice.

3. Bring to a boil and simmer over low heat until thickened, stirring occasionally with a spatula. The raspberry mixture should easily pull away from the sides of the pot.

4. Line the baking tray (pan) with a silicone mat or parchment paper. You can lightly grease it with vegetable oil. Dry the figs in the sun until ready, or in the oven at 40-50 degrees.

5. The finished figs are not sticky, easily peel off the parchment paper, and can be sliced into pieces. You can dust them with powdered sugar or layer them with baking parchment. Store the raspberry figs in a closed container in a cool place.
