Wash the berries and dry them thoroughly.

Combine the raspberries with sugar and blend into a purée. A blender is convenient to use for this.

Try the puree, add more sugar if necessary.

Strain the purée through a sieve to remove the seeds.

I will be drying the marshmallow in a dehydrator. The tray needs to be lined with parchment paper, with a circle cut out in the center.

To make the fruit leather peel off easily, drop a little vegetable oil and spread it well using a brush.

In small portions, place the berry puree onto the tray. Spread it into a thin, even layer. Put it in the dehydrator at a temperature of 65 degrees. You can also dry the fruit leather on a baking sheet in the oven.

My raspberry marshmallow was ready in just 5 hours. However, it all depends on the dehydrator and the thickness of the layer. The finished marshmallow should not stick or ooze.

I cut the pastila into small strips and roll them into little rolls. I store the pastila in the refrigerator, in a container with a tight-fitting lid.
