Mini cupcakes
Description
Perfect with tea and coffee. I make these delicate raspberry muffins quite often. Even beginner cooks will appreciate this easy recipe. You can prepare the batter using yogurt or kefir. I prefer yogurt as it gives the muffins a special aroma. Serve warm or chilled. Ideal with tea.

Step 1

1. I came across this simple recipe in a German magazine, although they used different berries instead of raspberries. I happened to have raspberries on hand, so I decided to use them to add variety to the muffins.

Step 2

2. Beat the eggs with sugar and yogurt until smooth.

Step 3

3. Add the baking powder and flour, then knead the dough. It should have the consistency of pancake batter.

Step 4

4. For baking, use any molds. I'm used to using silicone ones, but I grease them with vegetable oil beforehand. Place the dough into the molds, filling them about 85%.

Step 5

5. Place berries or fruits on top. Bake in a preheated oven at 180 degrees for half an hour.

6. When they are ready, let them cool slightly, then easily remove from the mold and place onto a serving plate. Sprinkle with powdered sugar and serve!
