
Malabi
Description
The recipe won't take much time. The dessert turns out very tender and thick. It's best to use slightly tart and definitely red berries. Cornstarch works best, making the dessert much more delicate. If you don't have rose water, add vanilla instead. Serve chilled.

Prepare all the necessary ingredients for making malabi.

Pour cold milk into a heavy-bottomed pot, add cream and rose water.

Add sugar to the milk with cream and stir. Place over medium heat and bring to a boil.

Add the starch to the remaining milk and mix. While stirring the dairy mixture, pour in the diluted starch. Continue stirring and cook until thickened. This will take about 1 minute.

Remove the pot from the heat, let it cool slightly, and distribute into ramekins or glasses.

Pour the strawberry juice into a saucepan and add the berries, in my case lingonberries. Place over medium heat and bring to a boil.

Dissolve the starch in cold water and mix. While stirring, pour it into the saucepan with the juice and berries.

Boil until thickened and begins to bubble. Remove from heat and let cool slightly.

Pour over the white layer, cool, and refrigerate for 5 hours. Then remove, sprinkle with coconut flakes, and serve.
