
Poppy seed pie
Description
Perfect for tea and coffee. I present to you an incredibly beautiful yet very simple to prepare cake called "Rose". This cake is filled with poppy seeds mixed with whipped egg whites and raisins, giving it a special festive flavor. The cake turns out remarkably rose-like, as the pieces of dough are arranged at an angle to each other, creating a petal effect when baked. Instead of raisins, you can add dates, nuts, or apricots to the filling.

1. Prepare the dough: add a tablespoon of sugar, two tablespoons of flour, and pressed yeast to warm milk, and mix well. Let it sit at room temperature for 15–20 minutes.

2. Pour boiling water over the poppy seeds so that the water level is about 2 cm above the seeds. Simmer the poppy seeds for 20 minutes, stirring occasionally.

3. Mix the sifted flour with the dissolved yeast. Beat the egg yolk with sugar using a whisk and add it to the dough. Add the melted butter, knead the dough, cover it with plastic wrap, and let it stand at room temperature for 1 hour.

4. Strain the poppy seeds through a sieve with cheesecloth and grind using a blender. Beat the egg white with a mixer into a stiff foam, gradually adding sugar. Add the egg white and raisins to the filling, mix well.

5. Divide the dough into two parts and roll each into a flat sheet. Evenly spread the filling over the dough and roll it up into a log. Cut the log into pieces 1.5 cm wide.

6. Place the pieces of dough into a buttered baking dish, first along the edges, then slightly angled towards each other, leaving space between them. Cover the pie with a towel and let it rest at room temperature for 30 minutes.

7. Brush the pie with lightly beaten egg and bake in a preheated oven at 190 degrees for 35-40 minutes until golden brown. Let the pie cool completely, then remove it from the mold.
