
Poppy Seed Easter Bread
Description
Perfectly pairs with tea and coffee. The ingredient amounts listed here are for a small portion, yielding 1-2 small loaves. However, you can confidently double or triple the recipe. I highly recommend adding lemon zest, as it enhances both the aroma and flavor. You can knead the dough not only by hand but also using a bread machine or a stand mixer. Serve warm or chilled. Ideal with tea.

1. In a small bowl, combine the yeast, a couple of teaspoons of sugar and flour. Mix and pour in a small amount of warm milk. Let it sit for about 10 minutes.

2. Meanwhile, combine the eggs, remaining sugar, sour cream, vanilla extract, and beat until smooth. Add to the sponge mixture, then sift in the flour. Mix in the poppy seeds and lemon zest.

3. Add the butter and knead thoroughly until smooth.

4. Cover the dough with a towel or plastic wrap and leave it in a warm place. When it has risen, punch it down well and let it rise once more.

5. Place the dough into baking molds. Let it rise for about 20 minutes in the molds, then put into a preheated oven at 180 degrees.

6. Baking time depends on the size of your mold. Watch for the top to turn golden brown and for a toothpick or matchstick to come out dry when inserted. Let the finished kulich cool and, if desired, decorate with icing.
