Poppy seed and coconut cake
Description
The baking is simple and quick. We'll prepare the cake in several stages: baking the sponge cake, making the frosting, and assembling the cake. Be sure to allow the cake enough time to cool down and for the layers to soak properly—then you'll be satisfied with the result. So, take a look
Instructions
- 1
Step 1

Prepare the ingredients first for the sponge cake. Let's get started!
- 2
Step 2

Take a deep container and, using a mixer, combine the eggs with sugar until fluffy.
- 3
Step 3

Add poppy seeds, coconut flakes, and mix with a blender.
- 4
Step 4

Melt the butter, then, without turning off the mixer, pour in the butter and add the sour cream.
- 5
Step 5

Add the flour and baking powder. Use a mixer to bring the mixture to a smooth consistency.
- 6
Step 6

Grease the mold with butter, pour in the batter, and cook in the multicooker on the "Baking" setting for one hour.
- 7
Step 7

Now let's prepare the custard cream.
- 8
Step 8

Mix the eggs with sugar, flour, and a small amount of milk. Use a mixer to make the mixture smooth and free of lumps.
- 9
Step 9

The result of whipping is shown in the photo.
- 10
Step 10

Pour in the remaining warm milk and cook the custard over low heat or in a double boiler until thickened. I always use a double-bottomed saucepan for custard, as it prevents burning and allows the cream to heat slowly.
- 11
Step 11

Let the prepared cream cool, then add softened butter and beat with a mixer until you get a fluffy, smooth mixture.
- 12
Step 12

The sponge cake is ready. Don't rush to remove it; let it cool in the mold.
- 13
Step 13

Line a plate with two pieces of paper. When the cake is assembled, pull the paper pieces from opposite sides, and the plate will remain clean without damaging the cake. Cut the biscuit into three layers. Generously spread each layer with custard cream.
- 14
Step 14

Assemble the cake, spread the frosting on top and sides. Decorate with coconut flakes or coconut chips. Let it chill and soak in the refrigerator for at least 2–3 hours. Enjoy!
