
Pasta with carrots and onions
Description
The dish is prepared without unnecessary complications. Actually, as a child I absolutely disliked this dish because it was a constant symbol of financial hardship: having macaroni with carrots and onions for lunch meant that money had run out and Dad's salary was still far away... And therefore, there was no point in hoping for any cakes or candies during that time. Later, as a student and young wife, I myself often cooked such macaroni just before receiving my scholarship or paycheck—the negative image of macaroni with carrots and onions didn't fade at all; on the contrary, it became even gloomier. Only years later, when I first cooked this dish not because I had nothing else to eat, but because I genuinely craved it, did I finally realize how remarkable the recipe for macaroni with carrots and onions really is! But, like any other food, it must be cooked with soul. Because simple macaroni with carrots and onions can rightfully claim the proud title of pasta. And then they transform into a completely different dish ;) The dish is now ready to be served.

First, cook the pasta. The best way is to turn off the heat when the pasta is still firm, and let it finish cooking in the hot water. Then drain it in a colander or remove with a slotted spoon.

Peel the carrots and cut them into cubes, strips, slices, or matchsticks—it doesn't really matter. The main thing is not to grate them; the carrot pieces should be clearly noticeable.

Peel the onion as well and chop it—again, using your preferred method. However, the onion and carrots should be cut into roughly similar-sized pieces.

Heat the vegetable oil.

Peel the garlic, crush each clove with the flat side of a knife, and sauté in oil for 1-2 minutes. As soon as the garlic begins to turn golden, remove it from the pan and set aside temporarily.

In flavored oil, sauté the carrots over medium-high heat. Sprinkle them with sugar and cinnamon, and cook, stirring constantly, until they develop a golden caramelized crust. Add curry or other spices, and mix well. The aroma will be absolutely amazing! :)

Add the chopped onion and sauté until it also turns golden.

Return the garlic to the skillet, add the pasta, and mix well. Cook for another 5–10 minutes over medium heat, uncovered—any excess moisture should evaporate, and the pasta should absorb the flavors of the vegetables and spices. Then turn off the heat, sprinkle the pasta with chopped herbs, mix once more, and let it sit, covered, for 5 minutes. Serve hot.
