
Shells Pasta with Cheese and Tomato Sauce

1. Boil the pasta for half the time indicated on the package instructions. Do not overcook! Drain the water and rinse under cold water. Set aside. Heat olive oil in a large skillet over medium heat. Add onion and garlic, and sauté for 1-2 minutes.

2. Add the Italian sausage, breaking it into pieces. Pour in the red wine and cook for 1-2 minutes.

3. Add the chopped tomatoes and mix. Add sugar and salt. Bring to a boil, then reduce the heat to the lowest setting. Cover with a lid and simmer for 30 to 45 minutes, stirring occasionally. Add spices to taste. You can add crushed red pepper.

4. In a separate bowl, mix ricotta, half of the Parmesan, Romano cheese, egg, salt and pepper, basil, and 2 tablespoons of parsley.

5. Fill each "shell" with the prepared cheese filling.

6. Place the pasta cut-side down into the pan on top of the tomato sauce.

7. Pour the sauce over the pasta and sprinkle with Parmesan. Bake the pasta at 175 degrees for 25 minutes. Serve with crusty French bread.
