Prepare the ingredients. First of all, I recommend making the cream.

Pour the egg whites into a mixing bowl and whisk them into a fluffy foam. Then add the sugar, and a pinch of citric acid. Whisk until stiff peaks form, add one drop of food coloring and whisk again until the color is uniform.

Fold the flour with baking powder into the beaten egg whites.

Using a silicone spatula, mix the flour with the egg whites, turning the bowl with the dough counterclockwise. Stir until the dough streams off the silicone spatula in a wide, continuous ribbon.

Transfer the dough to a pastry bag and pipe it onto a silicone mat, shake to eliminate bubbles. If bubbles are present, carefully pierce them with a toothpick; the surface should be smooth. Leave it like this for 50 minutes; after this time the surface of the pieces should be dry and not stick to your hands. Preheat the oven to 130 °C for 10 minutes.

Bake the pastries for 18 minutes at 130 degrees (without convection!). Cool.

To make the cream, heat the cream to 60 °C (do not boil), remove from the heat, and stir in the chocolate.

While the mixture is still hot, stir in the butter, then place it in the refrigerator until completely cooled, preferably for at least 2 hours.
