Description
The recipe won't take much time. To make authentic macarons, you need to follow a few simple rules: precise weighing of all ingredients, freshness of almond flour, room temperature, etc. It is precisely due to the unconventional preparation process that these pastries turn out incredibly delicious, beautiful, and original. This baked treat can confidently be presented as a gift, especially if you make colorful macarons (gel food coloring works best for this). Serve warm or chilled. Perfect with tea.

1. Using a template, mark the outlines of the future pastries on parchment paper. Sift the almond flour and powdered sugar, then thoroughly mix them. Evenly spread the mixture over the baking paper.

2. Dry in a preheated oven at 160 degrees for five minutes. Sift the dried mixture twice. Combine sugar with vanilla sugar. Beat egg whites, kept at room temperature for 24 hours in a closed container, with a pinch of salt until stiff peaks form.

3. Without stopping the whipping, add sugar to them and whip until stiff peaks form. Sift the almond mixture into the egg whites in small batches, gently folding with a spatula. Rotate the bowl clockwise and mix with the spatula until smooth and uniform.

4. Transfer the dough into a pastry bag. Place the baking paper with the marked side down. Pipe the cookies onto the markings and tap the baking sheet on the table several times.

5. Smooth out the depressions from the bubbles with a toothpick. Leave at room temperature for 30-60 minutes to form a crust on top. Bake in a preheated oven at 150 degrees for 10 minutes.

6. The finished macaron has a firm crust. Transfer the paper with the cookies to a table and let cool for 15 minutes. Carefully flip the shells and find a pair for each one.
