
Mayonnaise with mustard powder
Description
A delicious addition to everyday and festive dishes. Mustard powder mayonnaise is perfect not only for dressing salads, but also for marinating chicken or pork for kebabs, baking in the oven or grilling. It can also be served with ready-made dishes, for example, with shawarma, boiled potatoes, fried or boiled sausages. Perfectly complements pasta, meat, and vegetables.

Prepare the listed ingredients. You can use slightly more egg yolks — 3-4 pieces. Keep in mind that mayonnaise made with yolks from farm-raised eggs will be brighter, yellow-orange in color.

Carefully separate the yolks from the whites of the chicken eggs. Set the whites aside to use in another dish, as they will not be needed for this recipe. Place the yolks into the bowl of a food processor or into a deep container if you will be mixing the mayonnaise with a mixer or blender. Add salt, granulated sugar, and mustard powder. The sugar is added to activate the spiciness of the mustard powder.

Beat everything for 3-4 minutes until the mixture slightly lightens and becomes uniform. It is very important to beat thoroughly, because if the yolks are not beaten enough, the oil will not combine with the yolk mixture.

Gradually start pouring in high-quality vegetable oil: olive, sunflower, or sesame, but without a strong aroma. Do not rush; it is very important to do this gradually, incorporating the oil with each whisking.

When the mayonnaise is ready, pour the lemon juice into the container and beat again. Lemon juice can be replaced with apple juice or 6% vinegar.

Place the ready-made mayonnaise with mustard powder into a sauce boat, bowl, or container with a lid, and store it in the refrigerator for no more than 3-4 days — the sauce spoils quickly since it's made from natural and fresh ingredients.
