Prepare the listed ingredients. Peel the beet in advance and rinse it under water.

Break the chicken eggs into the deep container of the blender, then add salt and ground black pepper.

Beat the eggs with an immersion blender for 3-4 minutes.

Start slowly pouring in the vegetable oil in a thin stream, continuing to whisk. After 4-5 minutes, the liquid mixture will thicken and become dense, turning into mayonnaise.

Then grate the beet into a salad bowl using a fine grater and squeeze the juice from the mass. Add the juice to the mayonnaise together with vinegar.
