Description

Universal dressing for salads and hot dishes. It's hard to believe, but mayonnaise made with aquafaba tastes very delicious and is almost indistinguishable in flavor from store-bought mayonnaise. This version is perfect for a fasting diet. It's truly delicious, with no hint of bean flavor at all.

    Prepare all the necessary ingredients. Instead of canned peas, you can use the brine from canned white beans or chickpeas.

    Open the can of peas and carefully pour 50 ml of brine (aquafaba) into a glass.

    We will also need an immersion blender to make the mayonnaise. For convenience, pour the aquafaba into a tall jar.

    Pour the vegetable oil in several batches, whisking the ingredients as you go. You can use olive oil.

    The more oil we add, the thicker the sauce becomes; that is, its consistency depends solely on the amount of oil. Store the finished mayonnaise in the refrigerator for no more than 5 days.
