
Mafroom
Description
Mafroum is a dish made of potato slices stuffed with filling and baked in tomato sauce. It is very tasty and unique. Although it is simple to prepare, it does require some effort. However, the result is well worth the time spent! Mafroum is a complete dish on its own, as it contains both meat and side dish. Traditionally, though, it is served with couscous or rice.

1. Add salt, spices, onion grated on a coarse grater, egg, and a little greens to the minced meat. Mix well and set aside.

2. Peel and wash the potatoes, then slice them into rounds. Make a cut in each round, but not all the way through.

3. Fill the resulting "pockets" with the stuffing.

4. Now prepare the batter: in a small container, whisk together the egg, tomato paste, water (2 tbsp), salt, and pepper.

5. Then dip the potato into the batter and coat it with flour.

6. Fry each potato piece on medium heat for several minutes on each side until a crust forms. Then transfer the mafrum to a dish where the potatoes will be stewed.

7. Finely chop the onion, and grate the garlic on a fine grater.

8. Sauté the onion until translucent, then add garlic, sugar, tomato paste, and spices: paprika, ground cumin, salt, and pepper.

9. Pour hot water (2.5 cups) over everything and boil for 2-3 minutes. Then pour the sauce into the dish with the potatoes.

10. Cover the dish with foil and place it in a preheated oven at 180 degrees for 1-1.5 hours.
