
Muffins with green onion and goat cheese
Description
Perfect with tea and coffee. The flavor of these muffins is slightly salty, cheesy, with a pleasant onion aroma. Onion and cheese muffins are prepared very quickly and easily. Serve warm or chilled. Perfect with tea.

1. Preheat the oven to 200 °C. Spray the 12‑cup muffin tin with cooking spray or line it with paper liners. In a large bowl combine flour, baking powder, salt, sugar, baking soda and chopped green onions. In a small bowl whisk together the egg, melted and cooled butter, and buttermilk.

2. Using a dough cutter, mix the dry ingredients with the goat cheese until you achieve a crumbly mass. Add the cream mixture and stir with a rubber spatula until a uniform consistency is reached. Evenly divide the resulting dough among the compartments of the prepared mold.

3. Bake for 18 to 22 minutes, until a toothpick inserted into the center comes out clean. Let the muffins cool in the pan for 5 minutes, then remove them from the pan. Serve the muffins warm.
