
Apple sauce muffins
Description
Delicious baked goods for the whole family. Preheat the oven to 170 degrees. Spray muffin pans with oil using a spray bottle. Place apple puree and dates into a medium saucepan. Cook over medium heat, stirring frequently, until the mixture reduces to 1 1/4 cups, about 15 to 20 minutes. Spread the mixture evenly onto a baking sheet and let cool completely. Transfer the mixture to a large bowl and add bran, buttermilk, eggs, honey, ginger, and vanilla. Let stand for 10 minutes. Meanwhile, mix together flour, flaxseed, baking soda, salt, allspice, and 1/4 cup of oats. Add the bran mixture. Spoon the batter into the prepared muffin cups. Sprinkle the remaining 1 tablespoon of oats on top. Bake for 21 to 23 minutes. Let cool completely in the pans. Muffins can be stored in an airtight container at room temperature for up to 3 days.
