
Chocolate Sprinkle Muffins
Description
This recipe yields 18 muffins. They are great served with a glass of cold chocolate milk. Can be served with tea or coffee.

1. Preheat the oven to 175 degrees. Spray the muffin tin with oil or line with paper liners. In a medium bowl, mix together sour cream, eggs, and vanilla extract. Whisk and set aside.

2. In the bowl of a food processor, mix pecans (if using), brown sugar, cinnamon, and cocoa. Transfer the mixture to a bowl and set aside. In a clean food processor bowl, combine flour, sugar, and salt, then add pieces of butter. Pulse 8–9 times. Mix 1/2 cup of the flour mixture with the topping using a fork, and set aside.

3. Add baking powder and baking soda to the remaining flour mixture in the food processor and mix 4-5 times. Pour in the sour cream mixture and mix 5-6 times.

4. Add 3/4 cup of the topping and mix with a rubber spatula.

5. Place 2 tablespoons of batter into each muffin cup. Evenly sprinkle 2 teaspoons of topping over each.

6. When using, sprinkle 1 teaspoon of chocolate chips on each muffin. Bake for 15-18 minutes.

7. Let stand for 2 minutes before removing from the mold. Let cool for 10 minutes before serving.
