
Ricotta and Blueberry Muffins
Description
Homemade baked goods for tea. A subtle hint of lemon against the backdrop of honey and maple syrup perfectly complements the mild sweetness and berry flavor of the muffins. Those with a sweet tooth can increase the amount of honey or add a bit of sugar, but I'd recommend baking them as is, and if they're not sweet enough, simply drizzle the finished muffins with maple syrup on top. We found them delicious just the way they are. Serve with tea or coffee.

Beat the eggs with honey and maple syrup into a foam.

Grate the zest of a lemon finely and add a teaspoon to the egg mixture. Add ricotta and sifted semolina mixed with baking powder. Add the butter, cut into pieces.

Pour in a tablespoon of lemon juice and knead the dough. Add the berries and gently mix with a spatula.

Divide the batter into muffin molds. Place a thin slice of lemon on top of each muffin and sprinkle with sugar.

Bake at 180 degrees until done, about 25-30 minutes. Cool the muffins on a rack and serve with tea.
