
Rhubarb Muffins
Description
The recipe won't take much time. Rhubarb muffins have a pleasant sweet-and-sour taste. The baking is ready. Serve at the table.

1. Preheat the oven to 190 degrees. Grease a 12-cup muffin tin with oil. Prepare the topping. In a small bowl, mix together flour, sugar, ground cinnamon, nutmeg, and salt. Stir in melted butter until the mixture becomes crumbly. Set the topping aside. Prepare the muffins. Cut rhubarb into 1 cm pieces.

2. Melt and cool the butter. Beat the egg with sugar and brown sugar in a bowl. Mix in the butter, then mix in the sour cream. In a separate bowl, combine flour, baking powder, and baking soda. Gradually add the flour mixture to the egg mixture and stir until smooth. Add the rhubarb and 1/3 of the prepared topping, mix well.

3. Divide the batter evenly among the muffin tin cups. Sprinkle each muffin with the remaining topping, then gently press the topping into the batter using a spoon. Bake for 15–20 minutes, until the tops are golden brown.

4. Let cool in the pan for 2 minutes, then remove from the pan and cool completely.
