
Muffins with Mascarpone
Description
The recipe won't take much time. If you're using frozen fruits or berries, thaw them first and drain off all the liquid. You can use any shape and size of muffin molds that are convenient for you. Ready mascarpone muffins can be dusted with powdered sugar or drizzled with melted chocolate. Serve cooled or slightly warm.

1. Beat the mascarpone with a mixer at low speed until smooth and homogeneous.

2. Gradually add sugar to the resulting mixture, continue beating until evenly distributed.

3. Then add vanilla sugar, salt, zest, and flour. Beat briefly, carefully add lemon juice, and continue beating.

4. Add the eggs one at a time and continue beating until you get a fluffy, smooth mixture. The batter should have a consistency similar to sour cream.

5. Pour the resulting batter into round silicone muffin molds. Fill the molds no more than 2/3 full, so the batter doesn't overflow during baking.

6. Bake the muffins in a preheated oven at 180 degrees for about an hour (baking time may vary depending on the size of the molds).

7. Remove the finished muffins from the oven and let them cool completely. Decorate with fresh fruits, then pour over the pre-prepared quick-setting jelly.
