
Peanut Butter and Jam Muffins
Description
Homemade baked goods for tea. Muffins with jam baked inside are much tastier than if the muffins were simply topped with jam separately. The baking is ready. Serve at the table.

Step 1

1. Preheat the oven to 190 degrees with the rack in the center position. Lightly spray a 12-cup muffin pan with cooking spray or line with paper liners. In a large measuring cup, whisk together milk, eggs, melted butter, and vanilla extract. In a large bowl, combine flour, sugar, baking powder, salt, and nutmeg. Add peanut butter and mix until blended. Add the milk mixture (all at once) and beat with a mixer at low speed until just combined.

2. Spoon about 1 tablespoon of batter into each prepared muffin cup. Place about 1 teaspoon of jam on top of the batter. Evenly divide the remaining batter among the muffin cups.

3. Bake the muffins until a toothpick inserted into the center comes out clean, about 15–20 minutes. Place the pan on a wire rack and let the muffins cool slightly for 5 minutes. Use a thin knife to remove the muffins from the pan. If you used paper liners, removing the muffins will be easy.
