
Blueberry and Apricot Muffins

Prepare all the necessary ingredients for making apricot and blueberry muffins. Melt the butter using any convenient method and let it cool. Take the eggs out in advance so they reach room temperature.

Wash the blueberries, drain in a colander and let all the water drain off completely. Spread the berries on a paper towel and let them dry.

Wash the apricots and dry them thoroughly. Remove the pits and cut into small cubes.

Separate the eggs into yolks and whites. Set the whites aside for now; we'll need them later. Place the yolks, sugar, and vanilla sugar into a bowl and beat until the sugar crystals dissolve.

Pour vegetable oil into the eggs.
