Prepare all the ingredients.

Bake the sweet potato in advance in the oven until tender. Cooking time will depend on the size of the sweet potato. I baked it for about 1 hour at 190°C.

After cooling, peel, and mash into a puree with a fork. You will need 180 grams of puree for this recipe.

For the streusel, in a small bowl, mix coarsely chopped walnuts, cinnamon, salt, and sugar. Add butter cut into cubes.

Crumble everything into fine crumbs. Refrigerate.

In a deep bowl, mix half a can of flour, vanilla sugar, cinnamon, baking powder, baking soda, and sea salt.
