
Banana butter muffins
Description
The recipe is based on one by the famous British chef Jamie Oliver. Like all his recipes, it is simple and original, and comes together quickly from readily available ingredients. If you like, you can decorate the muffins with cream. The bake is ready. Serve at the table.

Prepare the ingredients. This amount is intended for 15–16 small muffins. You may halve the quantities. For baking, overripe bananas with dark spots on the peel are preferable—the baked goods turn out especially fragrant. Cane sugar can be replaced with white sugar. Take the butter out of the refrigerator ahead of time so that it softens.

Cut the softened butter into cubes and put it in the food processor bowl together with the sugar.

Beat the butter and sugar with a mixer. Peel the bananas and mash them with a fork. Add them to the butter mixture and beat the mixture again.

Separate the eggs into yolks and whites. Continuing to whisk the butter-banana mixture, add the yolks one at a time. 😊

Prepare the dry ingredients. Sift the flour into a bowl through a fine sieve.

Into the bowl with the flour, add poppy seeds, salt, and baking powder. Whisk the dry mixture with a whisk so the ingredients are evenly distributed.

Combine the butter-and-banana mixture with the dry ingredients and mix. Separately beat the egg whites until they have increased in volume and hold stiff peaks. Gently fold the beaten whites into the batter with a silicone spatula, scooping from bottom to top. If the batter seems too thick to you, you can add a couple of tablespoons of sour cream.

Place the batter into the prepared molds. These can be silicone molds or corrugated paper ones. Bake the muffins in an oven preheated to 180°C for 30 minutes. Check doneness with a wooden skewer.
