Zucchini Muffins

Description

Homemade baked goods for tea. To make zucchini muffins, I used one small zucchini. After grating it, I ended up with exactly 300 grams of grated zucchini. I added a banana for extra sweetness and decoration; if you don't have one on hand, you can replace it with something else: nuts, berries, or similar ingredients. See the recipe below.

    Preheat the oven to 200 degrees. Grate the zucchini on a fine grater, season well with salt, and set aside while you prepare the batter. We do this to remove excess moisture from the zucchini.

    Heat the oatmeal in a skillet. Prepare the dough: sift flour together with baking powder, cinnamon, and salt, then add the oatmeal and sugar to create a "dry" mixture.

    In a second bowl, mix together: kefir, eggs, baking soda neutralized with lemon juice, and oil.

    Combine our "wet" mixture with the dry one and mix well. Return to our muffin base—zucchini. Squeeze thoroughly to remove excess juice. Then add to the batter and mix.

    Place the batter into the prepared muffin tins. If the tins are not silicone, grease them with oil or use paper liners. Fill each cavity with batter up to two-thirds full. For convenience, use an ice cream scoop.

    Slice the banana into pieces, then sprinkle with lemon juice. Arrange them in a fan shape on top of the muffin batter. Sprinkle with cinnamon and sugar.

    Bake the muffins until golden brown, about 20-25 minutes. Remove from the oven, let cool for 5-10 minutes, then take out of the mold.

    Sprinkle the ready zucchini muffins with powdered sugar before serving.
