
Madeleines
Description
The recipe won't take much time. Madeleines are traditional French sponge cakes baked in a special mold. Serve cooled or slightly warm.

Step 1

1. Sift flour and baking powder together into a bowl. Using a mixer, beat eggs and sugar on high speed until the mixture lightens in color, about 2 to 4 minutes. Add lemon zest and vanilla extract. Gently add the mixture to the flour and stir with a rubber spatula, then add the melted butter. Cover the dough with plastic wrap and refrigerate for at least 3 hours or longer. The dough can be stored in the refrigerator for up to 2 days. Preheat the oven to 200°C (392°F) and place the rack in the center. If your Madeleine pan is not non-stick, grease it well with butter and lightly dust with flour. If the pan is silicone, no preparation is needed.

2. Divide the dough between the compartments, filling them almost to the top. Do not worry about leveling the dough.

3. Bake large madeleines for 11 to 13 minutes, small ones for 8 to 10 minutes, until golden brown.

4. Remove the baking sheet from the oven, then take the cookies out of the mold using a sharp knife. Let the madeleines cool on a rack. They can be served slightly warm or at room temperature.
