
Madeleines with orange zest
Description
Homemade treats for tea. I bake cookies in a silicone mold, so I don't prepare it or grease it in any way—the baked goods come out easily and don't stick. If you don't have a special seashell-shaped mold, it doesn't mean you can't make these cookies. Use a muffin tin instead; the cookies will come out like little rounds—just don't put in too much dough. Alternatively, use any biscuit mold currently available, such as those shaped like flowers, squares, or various figures. Serve with tea or coffee.

1. In a saucepan, mix 50 grams of sugar, maple syrup, salt, and water. Heat the caramel over medium heat. Cook for five minutes after boiling, until it turns amber in color. At the end, add baking soda and stir very quickly.

2. In a separate bowl, mix melted butter, honey, and vanilla extract. In another container, beat eggs with sugar using a mixer. Combine flour, baking soda, baking powder, the egg mixture, the butter mixture, and zest. Knead the dough.

3. Spread the dough into a cookie mold.

4. Bake the cookies in a preheated oven at 180 degrees for 13 minutes.

5. Melt the chocolate in a double boiler and dip the cookies into the ganache.

6. Crush one cookie into medium crumbs.

7. While the chocolate has not hardened, dip the cookies into the crumbs and let them cool.
