Description

Making "Matzun" at home is very simple – you only need two ingredients, and you can buy "Activia" at any store or supermarket. The main thing is to follow the preparation technology carefully and not mix anything up, otherwise the drink won't thicken and will remain liquid, causing the milk to simply sour. It can then be served.

    Prepare the listed ingredients.

    Pour milk of any fat content and type into a saucepan or pot, place on the stove, and heat over medium heat until it is almost boiling. Turn off the heat. Cool the milk down to 35 degrees, but not higher. If the liquid temperature exceeds 35 degrees, all milk bacteria will die.

    Carefully pour or spoon the "Activia" into the pot with the cooled milk. Mix thoroughly, as the yogurt may settle at the bottom of the container; it should be fully incorporated into the milk. Instead of "Activia," you can use any other plain classic yogurt without additives.

    Pour the milk and yogurt mixture into small cups or bowls. The smaller the container, the faster the drink will ferment. Cover each container with plastic wrap to prevent air exposure.

    Place the containers with milk in a warm spot, but not on a radiator or in an oven. Simply leave them at room temperature of about +22 degrees Celsius and cover with a towel. There should be no drafts. Let the containers sit this way for 8–12 hours. Then transfer them to the refrigerator for another 6–8 hours. Preferably overnight.

    After the specified time, you can remove the plastic wrap from the container. On the surface of the drink there will be a clear whey, and underneath — the fermented milk "Matzun."

    The shelf life of the drink stored in the refrigerator is 2 days. "Matzun" can be served with garlic, cumin, poured over oatmeal, etc.
