Description

The recipe won't take much time. Mooncake, or gingerbread, or yuebing is a traditional treat of Southeast Asia, prepared for the Mid-Autumn Festival. There are many variations of the recipe, depending on the region. The most popular filling is sweet beans. Yuebing can also be made with food coloring, giving the dough interesting colors. Often a salted duck egg is placed in the center of the cake, but I skipped this step—it's complicated enough as it is. The baked goods are ready. Serve at the table.

    Pour water into a saucepan, add the beans, and cook over medium heat for about 30 minutes, stirring.

    In a frying pan or saucepan, melt the coconut oil, add the bean purée, sugar, and a teaspoon of salt.

    Cook for 10-15 minutes, until the mixture thickens. Then let it cool down. The bean filling must be cold before making the pastries.

    Meanwhile, prepare the dough: mix the flour, a teaspoon of salt, and baking powder.

    Then add golden syrup (if you can't find ready-made in the store, prepare a thick sweet syrup from sugar or honey in water) and butter. Knead the dough.

    Divide the dough into 16 parts. Use 2 parts for each bun. You will get 8 buns in total.

    This is what a mooncake mold looks like. You can make them without it, but it's certainly more convenient this way.

    Line the table with plastic wrap and roll out all pieces into small flatbreads about 4-5 cm in size.

    Lifting the cling film, shape the dough into a "bowl" according to the form.

    Roll the pie in flour, shaping it into a cylinder so that it fits properly into the mold later.
