
Onion pancakes
Description
Perfectly goes well with tea and coffee. If you don't have a grinder, you can finely chop the onion with a knife, then thoroughly squeeze it by hand to release the juice. Follow the remaining steps as per the recipe. You can't help but like these onion pancakes, especially since it's very hard to guess what they're made of! Serve with sour cream. Can be served with tea or coffee.

1. Prepare the ingredients, peel the onion and rinse it. I have specified the weight of the peeled onion in the list.

2. Cut each onion into 4 pieces, place in a food processor and puree the onion in batches.

3. Add salt and pepper to the onion mash. You can add your favorite spices or herbs.

4. Add the eggs and mix.

5. Add the sifted flour and baking powder, and mix the dough thoroughly.

6. Ready! You can now proceed to frying the pancakes.

7. The dough has a medium consistency—it doesn't spread, but isn't too dense either, and is airy because the leavening agent has already started working. I only use homemade leavening, which I make myself from baking soda, citric acid, and flour; it never fails me.

8. Heat vegetable oil in a skillet. Take the batter with a tablespoon and place spoonfuls apart from each other. Fry for about a minute on each side; the batter cooks through perfectly, resulting in fluffy and tender pancakes.

9. Determine the level of "browning" yourself; I like it with a brown crust!
