
Onion pancakes
Description
The dish is simple and quick to prepare. This is a great recipe for serving not only adults but also children, who probably won't even guess that their favorite familiar pancakes contain onions. You can serve them on their own or with any filling, or add a tasty sauce—or simply a spoonful of sour cream. You can use regular onion or contrasting red and green onions. Serve warm or chilled. Perfect with tea.

1. Crack the eggs into a bowl, add mayonnaise, salt, sugar, dry yeast, and baking soda. Peel the onions and grate them on a grater or blend into a puree in a blender, then add to the bowl with the eggs. Sift the flour to enrich it with oxygen, and warm the water to room temperature.

2. Mix the contents of the bowl, add flour and water, knead the dough to the consistency of thick sour cream, and let it rest for 20 minutes.

3. Place the pan over heat, pour sunflower oil into it, then ladle the batter onto the pan in portions and fry the pancakes until golden brown on both sides. Stack the cooked pancakes on a plate and serve slightly cooled.
