
Onion jam
Description
A simple canning recipe with no unnecessary fuss. I’ll go into more detail below; the jars keep for up to a year in a cool place.

Prepare all the ingredients.

Slice the yellow onion into thin half-rings. If you want a more uniform jam consistency, you can dice the onion instead.

Heat butter in a heavy-bottomed saucepan. Sweat the onion for 5–10 minutes until soft and translucent. It must not brown or change color!

Then add all the spices, Jerusalem artichoke syrup, sugar, and white wine vinegar. Mix everything together.

Bring to a boil and simmer the onions over low heat for about 2–2.5 hours. Stir occasionally.

The onion should turn golden, become soft, and all the liquid should evaporate.

Transfer the onion jam to a glass jar and let it cool. The onion jam is ready.
