Since if you prepare it in season, both onions and tomatoes will be cheap. Especially since the quality of the tomatoes here is secondary. On the contrary: the riper and softer they are, the better! So don't hesitate to use "bruised" ones—they'll make a delicious sauce. Serve chilled or at room temperature.

1. Blanch the tomatoes, then peel them. Place them in a saucepan and lightly mash with a potato masher so they release their juice more quickly.

2. Meanwhile, chop the onion. When the tomatoes start to "bubble," add the onion to them. Boil for half an hour. If the juice begins to rise to the top, pour it into a separate bowl.

3. Puree the tomato flesh and onion further using an immersion blender. Add salt, sugar, and spices, then simmer for three hours over low heat. Stir occasionally to prevent burning, adding juice as needed. Add vinegar just before turning off the stove.
