Description

I started making onions in tomato juice several years ago, and my family immediately appreciated this appetizer. I often serve these onions as a side to meat dishes, porridges, and potatoes. I also had a successful experiment making soup based on these onions—now we frequently prepare tomato soups, which are both delicious and quick. Everyone who has tried this appetizer at my place always asks me for the recipe. Serve chilled.

    Prepare all the necessary ingredients. Peel the onion and rinse it.

    Slice the onions into 3-4 mm thick rounds.

    Finely chop the parsley and add it to the onion.

    Heat sunflower oil in a frying pan. Add tomato juice. If using tomato paste, pour in a little water. Add salt and sugar, stir, and simmer for about 10 minutes.

    Pour in the vinegar, heat for 1 minute, and remove from heat.

    Pour the resulting tomato sauce over the onions and mix well. Distribute the onions together with the marinade into clean jars, cover with lids, and sterilize for 10 minutes. Then seal the jars and leave them at room temperature until completely cooled.
