Instructions
- 1
Step 1
Add the following ingredients to a heated saucepan: butter, salt, sugar, and water. Stir and bring the mixture to a boil.
- 2
Step 2
After the butter has completely melted, add the flour to the pot and continue stirring. As soon as you notice the dough starts to stick to the spoon rather than run off it, turn off the heat. Let the dough cool for 15 minutes.
- 3
Step 3
After 15 minutes, add the eggs to the dough. Do this carefully. You may not need all 4 eggs. Slowly incorporate the eggs into the dough one at a time. The sign that your dough is ready will be its consistency—it will become thick enough but won't drip off the spatula.

Step 4
Preheat the oven to 180 degrees.
- 5
Step 5
While the oven is preheating, take a clean baking sheet and line it with a sheet of parchment paper.
- 6
Step 6
Using a pastry bag or any other tool, shape your future eclairs onto a baking sheet. Place the eclairs apart from each other so the dough has room to rise.
- 7
Step 7
Bake eclairs at 180 degrees for 20 minutes, then reduce the temperature to 160 and bake for another 10 minutes.
- 8
Step 8
Cool the finished eclairs and fill them with your favorite filling.
