
Salmon Cheesecake (Appetizer)
Description
A delicious appetizer for any gathering. This dish is called a cheesecake for good reason, as cream cheese (or curd cheese) is required to make it. I recommend making this appetizer in small molds sized for one person—this will make it easier to serve. If you're worried you won't be able to remove the appetizer from the mold, line it with plastic wrap beforehand. Salmon cheesecake can be served with olives, fresh herbs, and sliced tomatoes. Serve with herbs and sauce.

1. Cut the salmon fillet into thin strips. You can line an appetizer mold with plastic wrap, then arrange the fillet strips overlapping on the bottom of the mold, pressing them firmly against the mold walls.

2. Fill the mold with cream cheese or curd cheese. Cut circles from bread slices slightly smaller than the diameter of the mold and place them on the cheese.

3. Fold the salmon edges toward the center, smooth the surface, and refrigerate for several hours. Before serving, carefully remove the appetizer from the mold.
