
Salmon in parchment
Description
The recipe won't take much time. Preheat the oven to 230 degrees. In a small bowl, whisk together 2 tablespoons of lemon juice, 1 teaspoon of salt, and 1/4 teaspoon of ground pepper. Add shredded carrots and chopped cabbage, and mix well. Place four 37x37 cm parchment paper squares on a work surface. Using a slotted spoon, divide the carrot and cabbage mixture evenly among the squares. Pour the remaining liquid from the bowl into a separate bowl. Dip the salmon fillets into the liquid, then place them on top of the vegetables, seasoning with salt and pepper. Fold the parchment paper over and crimp the edges to seal. Bake on a baking sheet for 20 minutes. Before serving, open the parchment packets and transfer the contents to plates. Serve hot.
