
Salmon in crispy pastry
Description
I first prepared this salmon for a New Year's Eve dinner. Back then, all the guests were absolutely delighted with the dish, so now it's become a tradition—right at midnight, after a glass of champagne, we always enjoy salmon with a crispy crust! I highly recommend making this fish not only for festive occasions, but also for a romantic dinner or a family lunch.

1. For preparing this dish, we need salmon. Divide it into two fillets and remove all the bones.

2. Now, sprinkle it with lemon juice and leave it for a while, using this time to prepare the dough. It only needs 15–20 minutes to marinate.

3. The dough is easy to prepare: add the butter crumble to ice-cold water and knead the dough. Add salt and, if necessary, use a knife to help mix. The dough should become very elastic, so don't overdo it with the flour. Once the dough is kneaded, wrap it in plastic wrap and refrigerate. Meanwhile, mix the herbs into softened butter and spread this mixture over the entire surface of the salmon fillet.

4. Cover the top with the second fillet layer and place the fish onto the rolled-out dough. If desired, you can add a bit of lemon zest to the creamy mixture, which will enhance the salmon flavor and give it a special tanginess.

5. Make cuts in the dough wrapped around our fish. Next, place it on foil and wrap it up. Only now is it ready to be put into the oven, preheated to 180 degrees for 40 minutes.

6. Once the salmon is cooked, remove it from the foil and let it rest for a moment. If you bake it at 180 degrees, the process takes about 30 minutes; if the temperature is lower, it takes about 40 minutes.
