Salmon in mustard sauce

If you skip the frying step, the fish will end up boiled and stewed. But frying adds extra flavor and changes the texture of the fish fillet—it remains tender, yet not uniformly falling apart, as it would when boiled.     Mix Dijon mustard with maple syrup and ground red pepper in a bowl. Season with a pinch of salt. This will be the glaze for the salmon.

    Place the fillet on foil. Dip a brush into the prepared sauce and carefully coat the salmon fillet.

    Place the foil with the fillet on a baking sheet. Position the baking sheet closer to the upper part of the oven. Set the oven to a low ventilation mode. Bake at 180 degrees for about 5-6 minutes, until fully cooked.
