
Salmon with green sauce
Description
The dish is prepared without unnecessary complications. Instead of salmon, you can use trout or other types of red fish. The fish can be cut into pieces right away or left as a whole fillet. I make the green sauce based on parsley, then serve the fish with this sauce and garnish with avocado slices. The finished dish can be served at the table.

1. Wash the salmon fillet and rub its skin with 2 tablespoons of olive oil, then place it skin-side down on a sheet of foil. Grate 3 garlic cloves, mix with the zest of one lemon, ground coriander, salt, and pepper, then rub the mixture onto the fish.

2. Wrap the fish in foil, making sure there are no holes. Place the fish in a preheated oven at 120-130 degrees for 25-30 minutes. Blend fresh coriander, parsley, remaining olive oil, 3 tablespoons of lemon juice, 1 garlic clove, salt, and pepper in a blender until smooth.

3. Peel the avocado and remove the pit, then cut it into small pieces. Let the cooked fish cool slightly, then cut it into pieces, drizzle with green sauce, garnish with avocado, and serve.
