Salmon with honey glaze
Description
Toast coriander seeds in a dry large skillet over medium heat, stirring constantly, until golden, about 3 minutes. Remove from heat and let cool. Grind the seeds using a mortar and pestle. Prepare the glaze. In a small bowl, mix the ground coriander seeds, honey, soy sauce, and lemon juice. Lightly brush the top of each salmon fillet with the glaze. Heat oil in a shallow skillet over medium heat. Cook the salmon fillets for 1 minute, then reduce heat to low and cook for 2 minutes. Continue cooking for another 3 minutes if needed, until the salmon is slightly pink in the center. Transfer to a plate and cover with foil. Pour the remaining glaze into the skillet and bring to a boil over medium heat. Cook until the glaze thickens to a syrup-like consistency, about 1 minute. Serve the salmon with the glaze.
