Lightly salted salmon

Description

A delicious appetizer for any gathering. Red fish, like red caviar, is a delicacy by definition—and if it’s lightly salted salmon, carefully prepared at home in advance and served on the table as an appetizer with vodka, it’s pure magic. Truly, it’s hard to compare with the aesthetic pleasure of taking a bite of vodka with lightly salted salmon :) And in general, it’s an excellent appetizer—worth keeping in mind. Serve the appetizer at the table.

    Here are the ingredients we’ll use to make lightly salted salmon.

    Rinse the salmon fillet and remove the skin (optional; you can leave it on for now and remove it after salting).

    Finely chop our herbs.

    Place the fish in a convenient, suitable container (I use a baking dish) lined with parchment paper. Generously rub the fish with salt, pepper, and sugar.

    Sprinkle the fish with herbs on top.

    Wrap the fish completely in parchment paper (if you don't have any, you can use foil).

    Place our fish under a press for about two days—let it cure in salt.

    Once this time is up, remove the salted fish from the parchment paper and carefully start cutting it into pieces. I do it like this: I hold the fish in my left hand and the knife in my right, and I slice at a 45-degree angle. The slices should be a size that’s easy to eat in bites.

    We beautifully plate and serve the sliced pieces of lightly salted salmon. Mmmm... :)
