First, we thoroughly rinse the shoulder under running water and dry it completely. Now, take a sharp knife and make grid-like incisions on the side of the shoulder where the fat is. Be careful to cut only the fat, leaving the meat untouched.

Rub the shoulder on all sides with salt and spices, including in the cut areas.

Transfer the lamb to a baking sheet lightly greased with oil. Drizzle a small amount of olive oil over the top of the shoulder as well.

Now tightly wrap the baking tray with foil and place it in the oven preheated to 170 degrees. If you're unsure about your oven's performance, put a small pot of water on the bottom of the oven to create steam during baking, so the lamb doesn't burn or dry out.

Bake the shoulder for 1.5 to 2 hours. About an hour to an hour and a half after starting to cook, carefully unfold the foil and pierce the meat with a fork. If no blood comes out and the meat has already become tender, you can take the shoulder out of the oven. If the lamb is still tough after 1.5 hours of baking, continue cooking it.
