Prepare the ingredients.

Cut the beef along the fibers, not too finely.

Place the sliced beef in a bowl and marinate by adding olive oil, soy sauce, balsamic vinegar, thyme sprigs, and season with pepper. Refrigerate for at least 30 minutes, preferably 2-3 hours.

Cut the peeled potatoes into sticks, like french fries.

Heat a skillet, pour in vegetable oil, add the potatoes, and sprinkle with paprika.
